Raising The Bar For Energizing Snacks!

I’m sure everyone knows how it feels to have a jam-packed schedule.
All the hustling and bustling around, scrambling to get everything you set out to accomplish in the day crossed off your to-do list.
Sometimes, everything comes to us naturally, and we’re able to navigate even our busiest days with ease.
But every so often, the energy to get everything done just isn’t there…
During times like these, I want nothing more than to be able to sit down, have a moment to relax, and gather my energy before I get back to business.
However, with so much work to do on a busy day, it can be difficult to set aside the time for that.
I needed something simple and quick that I could use to keep my energy levels up and carry me through when I was having an off-day.
So, I put together this healthy, energizing, and delicious treat!
Here’s what you’ll need to bake yourself some
Crunchy Wei Qi Granola:
Dry Ingredients:
- 3 cups rolled oats
- 1 cup pecans, chopped roughly
- 1/2 cup almonds, chopped roughly
- 1/2 cup unsweetened coconut flakes
- 1 teaspoon ground cinnamon
- 1/2 cup goji berries
- 1/2 teaspoon salt
- 4 tablespoons Astragalus powder extract
Wet Ingredients:
- 1/3 cup coconut oil, melted
- 1/3 cup maple syrup
- 1 teaspoon vanilla extract
To get baking, follow these steps:
- Get your oven preheated to 275 degrees.
- Mix all the dry ingredients together (except for the Goji berries – we’ll be setting those aside for later).
- Whisk the wet ingredients together until smooth and well combined.
- Begin adding both the wet and the dry ingredients into a large bowl, and stirring until the ingredients are evenly mixed together.
- Pour mixture on a baking sheet in a thin layer and put it in the oven!
- Bake for one hour, stirring every 20 minutes.
- During the last 20 minutes of baking, mix in the Goji berries.
A Helpful Tip: When removing the granola from the oven once it’s done baking, don’t stir it right away.
Allow the granola to slightly cool and form those large crunchy clusters of delicious immune-supporting snacks.
And you’re all done. All that’s left now is to have a bite and enjoy!
